You can have only one gateway for the host. Usually you's configure the gateway for the Management Network/Service Console, because this is what may need to be accessed/access other networks, and therefore needs to be routed. For vMotion as well as iSCSI a dedicated, non-routed subnet should be used, and therefore don't need a default gateway..
